These are egg and milk free cookies that whip up in under 45 minutes.

  • 1 cup Oatmeal (quick 1 minute)
  • 3/4 cup Flour
  • 1/2 cup Brown Sugar
  • 1/2 cup Raisins
  • 1/2 cup Shortening
  • 1/4 cup Sugar
  • 1 egg (egg replacement)
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Vanilla

Mix all the ingredients in a bowl except for the raisins.  I like to fold the raisins in at the end to keep them from get’n beat up. I don’t mix it with the mixer, but that’s mostly because it’s quicker to beat it by hand. Drop 1″ balls onto foil or parchment lined cookie sheet. Cook in preheated oven at 375º for 10 – 14 minutes. Just watch for the edges to turn brown, then set out on pan to cool for 3 minutes and then pull off and cool on wire rack or plate.
