Simple, Fast, and Hearty
I like this because it’s a dish that bakes for a while so once I get it going, I can go play with the kids until dinner time. It’s real straight forward. First, cube some chicken and marinate for a few hours or overnight. Then toss your marinated chicken into a large glass dish and place in the oven at 400°. Let that cook for about 30 minutes and then flip and cook for another 15 minutes. While that is cooking I chop up large sized pieces of potato, corn (cobbed), mushrooms, and broccoli and toss them into boiling salted water. Once the chicken is about 90% done, usually about 40 minutes or so, I pull out the chicken, strain the veggies and then mix them together, season the whole dish with herbs, salt and pepper and then place back in the over for another 20 minutes covered with foil to keep the veggies from drying out. Uncover for the last 5 minutes just for color and then your done.
