A great soup to make in a crock pot. I cooked it on the 4 hour setting, but you could cook it over night on the lower settings.

I slow cooked the peas and ham in the crock pot. You could toss it all in early and cook it, but it all becomes a little mushy that way. I like the split peas to be super tender and mushy, but I pan fry and simmer the other ingredients before mixing in in the last 30 minutes of cooking to allow for some more texture and So after slow cooking the peas and ham together, I slice up the ham or shred it with a couple forks if it’s cooked long enough. Then chop the carrots, onion, and mushrooms and toss them in hot oil in a pan. Once the onions are transparent and the carrots are softened, I toss this mix in with the soup. Let it cook together for another 20-30 minutes and then it’s ready to serve.
