It’s hard to photograph meat loaf in a way that makes it look attractive, but trust me, this was one of the best slices of meat loaf I have ever eaten. I was trying something different, since I had already made the tabouli salad and the beans and I had 1 pound of beef that needed to be cooked. I’m not a big fan of ground beef. My usual defaults for ground beef are stews, chili, and meat pie. I was never a fan of meat loaf as a kid. It may have been because my mom always smothered it in catchup, as did I continuing in the family tradition, that is, until tonight.
I used some traditional ingredients like cheap beef, oats, flour, seasoning salt, sage, worcestershire sauce… but I also tossed in some applesauce and brown sugar.
The beans were cooked all day in the crock-pot and the tabouli wad prepared the day before and left in the fridge over night. If you have never made tabouli there is a dry mix bag that already has dried parsley and seasoning in it and all you add is fresh tomato, cucumber, oil, salt and lemon juice. One mix will last 2-3 meals and keeps for about a week in the fridge.
