There isn’t much to a quick stir-fry. The great thing is they are quick. I recommend high heat and plenty of hot oil. If you don’t have a peanut allergy, peanut oil makes a great stir-fry oil. I pick up those bags of stir-fry vegetables so that I already have a nice mix of color and flavor and I usually marinate the pork for about 15 minutes in soy sauce, garlic, and a little dash of brown sugar. The kids love these dishes because they get to eat it with chop sticks. Crazy how they will eat something with one utensil that they wouldn’t otherwise normally want. I can never make enough stir-fry to accommodate the requested refills although the wok I use is the largest I could find.
